Melt-In-Your-Mouth Peanut Butter Cookies

I used to make peanut butter cookies all the time when I was in university. They’re quick and easy and I always had the ingredients already in my kitchen. Needless to say, I overdid the peanut butter and had to take about a 2 year break… I am finally able to face peanut butter again and was craving it today – so I made peanut butter cookies!

Back before I had as much baking experience as I have now, my peanut butter cookies always turned out differently. They often turned out pretty flat and crunchy and there was even one time that I decided to substitute some ingredients and they turned out to be solid as rocks and pretty inedible.. oops! This time I wanted a soft chewy cookie and lucky for me, I was not disappointed with the results! The way I achieved this was not through modifying a recipe, but rather through the way I shaped and then baked the dough.

These cookies have a slight crunch to the exterior but are so soft on the inside. They just melt in your mouth! Yummm. Let’s just say, I ate far too many in one sitting.. I will never be making peanut butter cookies any other way than this again!

Ingredients

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 3/4 cup smooth peanut butter (I used light)
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 1/4 cups all-purpose flour

Directions

  1. Preheat oven to 350 F.
  2. Cream together butter and sugars until light and fluffy. Mix in peanut butter. Beat in egg and vanilla extract.
  3. Sift together baking soda and flour. Add to wet mixture and mix until just combined.
  4. Fill a small bowl with 1/3 cup granulated sugar. Roll heaping-tablespoon sized balls of dough in sugar to coat. Place on un-greased baking sheet. Press tops of balls lightly with fork to make a criss-crossed shape. Do not flatten completely (or else cookies will become flat and crunchy), just enough so there is a defined indent. Repeat with rest of dough.
  5. Bake for 8-10 minutes (mine were perfect at 8). Cookies may appear to be undercooked but they will firm up as they cool. Cool completely on cooling racks. Enjoy!!!

Chewy Chocolate Chip Cookies

My tummy hurts!! I just consumed way too many cookies and way too much cookie dough!! I couldn’t even control myself these are soooo good!

I often forget how delicious chocolate chip cookies are. I generally like to make more unusual cookie recipes as I like to try new things! So in comparison, chocolate chip cookies seem boring since I’ve made them a hundred times. But really, sometimes a classic chewy chocolate chip cookie, is the best kind of cookie!

Think about how many cookies you’ve ate in your entire lifetime. Even though I have spent the majority of my current life as a kid who was only allowed dessert on weekends, I probably have eaten thousands of cookies and I would guess that at least half of them have been chocolate chip. My mom is weird and doesn’t really like chocolate chip cookies, so it was my dad who always made them in our house while I was growing up. The ones he makes are small and flat, but so soft and chewy and I remember it being a huge treat when I’d find a few in my lunch at school 🙂

This was my first time trying this recipe. I haven’t really stuck with one single chocolate chip cookie recipe. I will repeat a recipe if I don’t have much time or if someone specifically requests it, but I generally like to try new ones even if the outcome from the last one was delicious. I will remember this recipe though – nice and chewy cookies with a bit of crunch and oh so tasty. They were also incredibly easy! No weird ingredients and it literally took less than 10 minutes to make the dough which was the perfect consistency, a great go-to cookie when you’re pressed for time!

Ingredients

Makes about 2 dozen cookies

  • 2 cups + 2 Tbsp all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup butter, melted
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg + 1 egg yolk
  • 2 tsp vanilla extract
  • 1 cup semisweet chocolate chips

Directions

  1. Preheat oven to 325 F. Lightly grease or line baking sheet with parchment paper.
  2. Combine flour, baking soda and salt.
  3. With an electric mixer, mix together butter and sugars together until smooth. Beat in egg, egg yolk and vanilla. Slowly add dry ingredients until combined.
  4. Fold in chocolate chips.
  5. Drop tablespoon sized balls of dough onto prepared baking sheet. Lightly press down so tops are flattened. Bake for 12-14 minutes until tops are set and beginning to brown. Remove from oven and allow to cool. Enjoy!!
